I did not know pizza-blotting was a thing, until now. I’m with the naysayers, not because of any debate about whether you might be mopping up good or bad fats, but because I’m convinced that we are vastly better off enjoying our food than being afraid of it. Eaten with gusto, good food is much more likely to be satisfying. I doubt there are many pizza-blotters in France, where the food is fabulous but there is a vastly lower rate of obesity than in the U.S.
